Forest Toast

Ingredients
- 150 g (~5 ounces) of grated Comté cheese
- 4 slices of whole grain bread
- 200 g ( 7 ounces) of button mushrooms
- 1 egg
- 1 small chopped onion
- 10 cl (10 ml) of cream
- A few flat sprigs of parsley
- 1 Tbs Olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400˚F.
- Cut the mushrooms into quarters or halves, depending on their size.
- Pour 1 Tbs of oil into a frying pan and fry the mushrooms over high heat until golden brown. Then set aside.
- Roughly chop the parsley.
- Sauté the onion in the left over mushroom oil.
- Mix everything together and place mixture on each slice of bread.
- Pour 10 cl of cream, the egg and the Comté cheese into a bowl.
- Mix and spread over the mushrooms on the slices.
- Season the slices and bake in the oven for 5-6 minutes. Serve hot.
