View this post on Instagram Quentin and Anaël Michaud are two French farmers caring for 50 cows on their picturesque Jura farm. They invite us on a tour of the mountain pasture (where the cows graze during the summer) and dairy. Watch as they lead their herd in for their afternoon milking (cows are milked twice each day, at 7am and 5pm). Then, the milk is collected, and is on its way to becoming delicious Comté cheese! Quentin and Anaël also discuss what makes Comté cheese unique – from the specific breed of cows they steward to the organic practices that ensure the highest-quality milk for the cheesemaking process.
