Grilled Cheese with Apple & Comté

Ingredients
- 150g of Comté Cheese (about ⅓ lb.)
- 8 large slices of hearty bread
- 2 medium onions
- 2 small golden apples
- 80g of butter (1/3 cup or 5 tablespoons + 1 teaspoon)
- 2 Tbs of sunflower oil
- Salt & pepper
Instructions
- Peel and slice the onions and the apples
- Melt the onion for 10 minutes in the saucepan with 20g (or ¼ th of the) butter, season with salt and pepper.
- Add the apples slices and cook for another 10 minutes over low heat.
- Cut the Comté cheese into thin slices.
- Spread the onion and apple compote over 4 slices of bread, place the cheese slices on top, cover with the 4 other slices of bread, press lightly on top.
- Melt the remaining butter with the oil in a large frying pan.
- Place the sandwiches in the pan, brown for 3-4 minutes on each side over medium heat until they are nicely browned.
