Comté Cheese, Banana and Vanilla Tatin

Ingredients
- 1 roll of puff pastry
- 100g of Comté cheese cut into thin slices
- 3 bananas
- 100g (1/2 cup) of powdered sugar
- 1 centiliter (3.3 fluid ounces) of Macvin (a fortified wine from the Jura)
- 1 vanilla bean
- 25g (1.75 tbsp) of butter
Instructions
- Preheat the oven to 356°F. Peel the bananas and slice them into fairly thick rounds. Scrape the vanilla pod.
- In a skillet, heat the Macvin, sugar, scraped vanilla seeds, and remaining vanilla bean over medium heat. Let it caramelize slightly, then add the butter. Stir briefly and add the banana slices. Coat the slices with the syrup and cook for about 5 minutes.
- Place this mixture in a tart dish. Cover with the Comté cheese slices, then with the puff pastry roll. Bake for about 30 minutes, then turn the tart out onto a serving plate. Serve warm, if possible.
