Comtois Omelette

Ingredients
- 150g of grated Comté cheese (1/3 pound)
- 8 eggs
- 20g of butter (1.3 tablespoons)
- 3 tablespoons of milk (or 2 tablespoons of crème fraîche)
- Chives
- A pinch of nutmeg, salt, pepper
Instructions
- In a bowl, crack the eggs. Pour in the milk or cream. Season with salt and pepper to taste, and add the nutmeg.
- Whisk vigorously until the mixture is frothy. Add the grated Comté cheese and chives to the mixture and stir.
- In a hot pan, melt the butter. Pour in the beaten eggs, flip the omelet over when it is three-quarters cooked, do not cook it on the other side if you like it runny.
