Double Bites with Melon & Comte Cheese

Ingredients
  • 1 melon
  • A piece of fruity Comté cheese (a younger cheese 4-12 months)
  • Sichuan pepper
  • Powdered sugar
Instructions
  1. Scoop out melon balls using a melon baller and place them in a pan. Sprinkle with sugar and cook for a few minutes until the balls caramelize and turn coppery. Remove from the heat and let cool.
  2. Cut the Comté cheese into cubes the same size as the melon balls.
  3. Assemble the whole thing: a cube of Comté cheese and a ball of melon (avoid using it too hot, it will soften the Comté). Secure with a toothpick.
  4. Sprinkle lightly with ground pepper and decorate with a few Sichuan peppercorn shells.
