Double Bites with Melon & Comte Cheese
- 1 melon
- A piece of fruity Comté cheese (a younger cheese 4-12 months)
- Sichuan pepper
- Powdered sugar
- Scoop out melon balls using a melon baller and place them in a pan. Sprinkle with sugar and cook for a few minutes until the balls caramelize and turn coppery. Remove from the heat and let cool.
- Cut the Comté cheese into cubes the same size as the melon balls.
- Assemble the whole thing: a cube of Comté cheese and a ball of melon (avoid using it too hot, it will soften the Comté). Secure with a toothpick.
- Sprinkle lightly with ground pepper and decorate with a few Sichuan peppercorn shells.
